Garden Veggie Tacos

5 c. zucchini peeled and cut in 1/4" pieces
1lb. ground beef or turkey
3/4 c. green pepper
1 1/2 tsp. salt
1 tsp. chili powder
2 large tomatoes, chopped
1/4 c. fresh or dried parsley
1 c. chopped onion
1 tsp. garlic salt
1 1/2 c. frozen corn
10 tortilla's
2 c. shredded cheese
Sour cream

Saute meat, onion, green pepper and garlic until well browned. Add remaining ingredients. Cover and simmer 10-15 minutes until vegetables are tender. Serve on tortilla's with shredded cheese and sour cream.

These were great. All three of my kids ate them right up. They had no idea how many vegetables they were eating.
